This dressing is super yum on a mexican style salad. However, my favorite way to use it is to make carnitas-- chicken or pork. My sister, Sarah, gave me this recipe. The only thing I changed is the vinegar, I use white wine vinegar. So, let's make some dressing.
If you have an emulsion blender, just put all the ingredients into a jar that will fit your blender. If you do not have one, then put all the ingredients in your regular blender.
Begin with 6 tablespoons white wine vinegar.
3/4 Cup vegetable oil
1/4 Cup honey
1/2 teaspoon oregano
1 1/2 teaspoons pepper
2 Chipotle peppers from a can in adobo sauce.
2 cloves of garlic minced.
Blend her up and you're ready to go.
