Everyone has their own version, but this is my go-to chicken salad. Apples, grapes, nuts and mayo. If I don’t have apples I’ll use pears. If I don’t have pecans I’ll use almond slivers. Simple and fresh. And on a butter croissant? Irresistible. Let’s make chicken salad together...
You'll need 5 cups shredded chicken. I usually just poach a couple breast’s in rosemary water and then shred. Rotisserie chicken is also delightful. We’ll use 2 cups of grapes, 1 apple, 1 cup of mayo and 1/4 cup pecans.
wash and halve the grapes
finely chop the apple
roughly chop the pecans
stir everything together
add a couple cracks of pepper and salt. (I say a couple but I actually like mine really peppery) And 1/4 t parsley.
The best way to enjoy it? On a buttery croissant. Second best- Ritz.
