Spring harvest salad

There's not a whole lot to say about salad except that I used to think salad was just ice burg lettuce some carrots and ranch dressing and that clearly isn't exciting. Then eventually I learned that salads could be delicious and full of all kinds of fun things. But it took a while before I realized that making fun salad at home isn't that hard and it's way cheaper than buying it from a restaurant.  This spring salad is fresh and crisp. It's great as a side or a main dish, but best of all it's easy to make. Just toss around a few simple ingredients and you have something surprisingly enjoyable. So, let's make salad together...

Begin with a large bowl

wash and chop one head of Romaine

Then chop 2-3 cups of baby spinach

Mix them together to that they're pretty evenly dispersed. Mixing different lettuce is one of the easiest ways to make a salad not feel boring. 

Next layer on one granny smith apple thinly sliced and cut into bite sized pieces

Next up, a handful of pecans. 

yay, now my favorite ingredient in this salad. Golden Raisins. about 1/4-1/2 a cup, depending on your preference.

Lastly, top with some thinly sliced chicken breasts fresh off the cast iron.

If you like dressing on your salad I recommend a poppy seed dressing. 

Dish it up and enjoy! Perfect for these stupid hot days.
