Pumpkin Doughnuts

Do I really need to say much to get you on board here? They're squishy, sweet, pumpkin-y with warm fall spices. I mean, hot, freshly fried dough covered in a glaze... what's not to want? The only "problem" is that they taste best fresh. So there's you're excuse to throw self-control out the window. Let's make Pumpkin Doughnuts together...
You're gonna start with 2 1/2 T butter (room temp), 2 1/2 T shortening and 1 1/4 cups hot milk. I just microwaved mine for a minute.

Pour the milk over the fats.

Stir them around so they melt and cool the milk slightly.

toss in 3 tsp yeast. let it sit for 5 minutes

Next you'll need 1/4 cup pumpkin puree, 1/4 cup sugar, 2 eggs and 1/2 tsp vanilla.

Dump them in.

In another bowl, whisk together 5 cups flour, 1 1/2 tsp salt and pumpkin spices: 1/2 tsp cinnamon, 1/4 tsp cardamom, 1/4 tsp nutmeg, 1/4 tsp cloves, 1/4 tsp ginger

Mix half of the flour mixture into the batter over low speed.

Then mix in the other half until just combined.

Switch to a dough hook and knead for 5 minutes on low speed. (do speed 2)

Move dough to a greased bowl and cover with plastic wrap. Let it rise in a fairly warm place (like the oven *unheated* but with the oven light on) for one hour or until doubled in size.

Place dough on a floured surface and have a floured cookie sheet near by.

Roll out the dough till it's about 3/4 inch thick.

Cut out your circles.

Then cut out the centers. Place everything on your floured cookie sheet. I even saved my scraps to fry!

Cover with a tea towel to let rise for another 30 minutes.

When you've got about 10 minutes left on your rise time, heat up some vegetable oil to 350.

We're ready to fry!

Fry the doughnut holes for about 30 seconds on each side.

And the doughnuts for 2 minutes on each side.

Let them drain + cool on a wire rack over paper towels.

For the glaze, whisk together 2 cups powdered sugar, 1/4 cup pumpkin puree, 1/4 cup milk, 1/4 tsp nutmeg and 1/4 tsp cinnamon.

Dip each doughnut in glaze.

eat asap. 
If you happen to have any left over till the next day, I strongly recommend you microwave it for 10 second before you eat.
