Chicken nuggets (gf & whole 30-ish)

Yes. Gluten Free, crispy, flavorful, homemade chicken nuggets that are kind of whole 30 and accidentally taste like Chick-fil-a. I don't know what else to say except that I'm amazed and so happy that these turned out how they did. Jeremy loves them so much he ate them all in two days. I made a big batch and had them in the fridge and He just popped them in the toaster oven when he came home for lunch. So thankfully they taste just as good as leftovers. You could definitely freeze them and reheat them in the oven. They're super good and super easy. Let's make chicken nuggets together...
First you'll need 4 chicken thighs. I used thighs because they don't dry out as easily as breasts do, especially when they're cut small and pan fried; and because I bought a bunch of thighs from Costco knowing that Jeremy doesn't like them (but they were so cheap I couldn't resist) so I needed to find a way for him to enjoy them.

Cut them into bite size pieces and set aside momentarily.

In a small bowl put together your dry ingredients starting with 1/3 cup coconut flour

1/2 cup tapioca starch or arrowroot powder or cornstarch. I've tried all three and they come out the same regardless.

2-3 tsp paprika (I opt for more bc flavor is a good thing)

2 tsp garlic powder

1 tsp onion powder

1 tsp salt

1/2 tsp pepper

Whisk together and set aside.

In a medium bowl with a lid (or a ziplock bag) whisk two eggs.

Add in the cut chicken

Put on the lid and shake to coat the chicken

Pour the dry ingredients in then cover and shake again

Great. Now heat some oil in a cast iron or shallow pan over medium high heat. Just use enough oil to get about 1/2 deep.

Once it's hot, place chicken in a single layer (you may need to cook in 2-3 batches)

Cook for 1-2 minutes and then flip them

As they come out set them on a paper bag lined baking sheet. Set the oven on warm and  keep them in there as you keep cooking batches.

Holy cow they are so good. I just hope you've been hoarding Chick-fil-a sauce like we have.
This makes about 30-40 chicken nuggets. Depending on what "bite size" means to you haha.
